Is there anything better than a trip to the cider mill in the fall? You know, dressing your little ones up in plaid, taking pictures of the apple trees or Michigan signs, fresh bakery treats, yummy apple cider, brisk hayrides, and picking pumpkins?

During the months of June to October, we can honestly say if you’re not a Michigander, well then we feel sorry for you. The other months… Definitely debatable.

Our favorite time to go to the cider mill is mid-September. It’s a little early for sure, but the leaves have still changed from green to reds, oranges, and yellows, the temperatures are warmer and to be honest, the whole month of October is too crowded at cider mills.  The best part about a cider mill?

With some chocolate chip muffins, there aren’t enough chocolate chips, and we find ourselves only enjoying the top of the muffin and regretting our decision once we get into the middle. Not these.

Lemon Poppy Seed

When life gives you lemons, sometimes you just need some lemon aid. And we don’t mean the refreshing drink. This one is definitely one of the more sophisticated tastes and not a muffin recipe for a baby — but it’s delicious nonetheless. 

Baked lemon flavors always brighten up a dreary day, and we love lemon desserts in general. We think there’s something to be said about shaking it up with some lemon flavors, especially during the spring and summer months

Lemon is clean, it’s refreshing, and as long as the flavor isn’t overpowering (which is crucial for lemon desserts) it makes for a sweet and decadent treat.

These are incredibly delicious, and absolutely perfect for a spring breakfast, mother’s day dessert, or sunshiney summer morning. This soft and decadent muffin base is just exploding with lemon flavor.

All thanks to the recipe itself which includes lemon zest, lemon extract, and lemon juice. But it doesn’t stop there.

Each fluffy center is stuffed with a silky smooth pocket of lemon curd, and the topping is a sweet drizzle of lemon glaze. We do need to be honest though. At first, some of us were nervous about making these.

Like we said before, as much as we do love lemon desserts—when the flavor is overpowering it can be too much to handle. However, some of our team members pointed out that the poppy seed flavors would balance out the lemon and create a unique flavor in these muffins. So, we gave it a shot. 

Guess what? The poppy does balance out the recipe perfectly and it makes for the perfect zesty seedy muffin with just the right amount of both flavors.

Matcha Lemon

Have you heard of matcha green tea powder? Well if you haven’t, don’t worry. So many are late to this party, but when they arrive they are bound to stay. Matcha may sound like the incompatible flavor for a muffin recipe suitable for a baby, but these will impress anyone. 

Matcha is premium green tea powder from Japan used for drinking as tea or as an ingredient in recipes. While other green teas are grown throughout the world, matcha is unique to Japan. It is the heart of the Japanese way of tea and has been celebrated for centuries. So then, why?

Well, after doing some research we found that Matcha green tea has an immense amount of benefits, and we honestly went from asking “what does it do” to “what doesn’t it do”

What we love most about these fluffy matcha lemon muffins, is that pairing t the matcha green tea with lemon was a perfect idea. The taste was subtle and not too sweet, but still yummy and sweet enough to feel like a desert because of the lemon

And the calorie count? Less than 150 per muffin. We have experimented with these muffins quite a bit, and they are a staple in the morning for us now. We prepare them a week ahead of time, and usually, add blueberries or chocolate chips to them. But don’t worry, they are good enough without doing that.

You can grab a muffin, make a small smoothie and head off to work feeling refreshed and like you just had dessert for breakfast. These can keep you on track and energized in the morning. Ahh, when fall is in the air… and so continues our obsession for baking. We don’t know what it is, but we are usually in our prime for experimenting in the fall.

Baking with pumpkin and apple flavors, trying out new possible staples, and creating recipes sums up the months of September-November for many of us.  If you’ve always been a bit of a health fanatic, you won’t need to worry about these muffins. One of our team members has such an inquisitive 7-year-old. He questions EVERYTHING, and always wants to know why things are the way they are, how they got to be that way, who invented things, etc…

Having kids has taught them so much about themselves. However, they say that raising kids takes a lot of energy. Of course, they have days where they’re stressed, overwhelmed, and feeling overly tired.

That’s what coffee cakes were made for. Once we got to discussing coffee cake, we reached a point in the conversation where we realized there’s no coffee included in the coffee cake.

It turns out Coffee cake is just intended to be eaten with coffee. Coffee cakes are often single-layered, flavored with either fruit or cinnamon has a more cake-like texture, or yeast, which results in a more bread-like texture.

This explanation definitely makes sense with the recipe. If you like New York-style coffee cake with its thick layer of crumbs, then you’re going to adore these coffee cake muffins. They’re the perfect muffin recipe for baby parents.

The first time we made these we had to experiment with peanut butter chocolate chips because we were out of regular chocolate chips and honestly they turned out amazing both ways!

We’ve all grown up watching Cookie Monster on Sesame Street, and when we grew up we wanted to capture his spirit.  He can always find a reason to eat a cookie, doesn’t share, he’s funny, and he’s just freaking wise. We loved Sesame Street if only for this character. 

These monster cookie muffins are inspired by our favorite blue little friend. And it’s the muffin recipe for the baby in you. They are loaded with M&M’s, sweet, savory, and fun to look at and make. The part we love best about this recipe? Oatmeal is substituted for some flour, which makes them a ton healthier and the mixture of the oatmeal, peanut butter, and M&M’s is one you won’t want to pass up.

Okay, seriously when the warm and cozy holiday season comes around the flavor of sweet and spicy gingerbread is just something we all have the urge to be eating.

We haven’t moved on from the oatmeal craze, sue us. 

Oatmeal is cheap, versatile, and just freaking tastes good, especially in the Autumn months. And the health benefits? Immense!

Oats are rich in carbs and fiber, but also higher in protein than almost any other grain. They are very high in many vitamins and minerals and aid in weight loss by helping you to feel full. It’s no wonder that the whole “overnight oat” craze took off and we were all about it.

The best oatmeal? The maple and brown sugar. Adults can get down with it, our kids love it, it gives us the fall taste we love, and it’s amazing in recipes just like this one.

We’ll be the first to say it… if we’re making muffins they better be good. We’ll sacrifice a healthy tasting muffin for a good tasting one any day because the whole point of a muffin is to treat yourself, right?

Well, oats are the perfect balance for this. They’re good enough for a baby and a muffin recipe. When we find a recipe like this… that IS healthy, tastes good, and healthy enough to customize with blueberries, chocolate chips, etc, we go with it

Banana Muffins

We love bananas in baking for so many different reasons. They tend to add the perfect sweet flavor to almost any dessert, and the moist texture keeps it fresh and decadent.

Plus, it’s used often as a healthy substitute that can take a calorie count down for recipes like cakes, muffins, pancakes, etc…

We won’t bore you with all the health benefits of bananas because we’re pretty sure we learned about them in 3rd grade, but you get the message. If you like the flavor, you should use them when you can.

These are hands down the best banana muffins we have ever had, and we don’t just say that. This isn’t a muffin recipe for a baby trying out banana for the first time, though. Not only are they packed with that sweet banana flavor but have a brown sugar streusel topping that is absolutely to die for.

The streusel topping is so good we use it in a lot of other recipes, but it’s our favorite in this one. This is easy to make, the flavor is a-peel-ing, and you can easily freeze them.

We tested it out, and they are just as good after being stored. These muffins are good hot or cold, any time of the day, and in any season.

Starbucks Copycat Blueberry Muffins

We were listening to a podcast just the other day about Starbucks; their business tactics, strategies to keep customers and get new ones, and their background story overall.

One of the business tactics mentioned that really stuck out to us was their strategy to get people to order food. Of course, you’re coming to Starbucks for coffee… So while you’re already there why not?

They train their customer service representatives and baristas to always ask “and would you like to add a blueberry muffin or breakfast sandwich with that coffee?” and then bam, all of a sudden you’re hungry.

At least one time, if not more, they will get to you to say yes. And there you have it. Immediate increase in revenue just for asking the question.

They sold us on the blueberry muffin a couple of months ago, and for several months after that, they had us paying the big Starbucks bucks for this muffin twice a week at our office. 

If you haven’t had a Starbucks muffin… well let us explain them to you.

They are hands down one of the best bakery muffins you’ll ever have. It’s a pretty large moist and sweet fun exploding with blueberries and topped with some sort of crunchy and sweet vanilla-ey streusel

This copycat recipe is everything if you’re trying to match this muffin. We can’t even taste a difference, that’s considering how many Starbucks muffins we’ve had. 

We have never made muffins with sour cream or white vinegar, but it all melds wonderfully and we think that’s the secret to the texture and creamy sweetness of the Starbucks muffins.
