Artichoke Bottoms Gratinees
2 tablespoons butter
1 (14 ounce) can artichoke bottoms, drained
1/2 cup chopped mushrooms
4 tablespoons grated Swiss cheese
Heat oven to broil. Saute artichoke bottoms in butter. Transfer to a baking dish
and keep warm.
Saute mushrooms in same pan in which artichokes were sauteed. Mound mushrooms
evenly on each artichoke. Sprinkle with cheese and broil until cheese melts.
Makes 6 to 8 servings.
