Caprese Panini

8 slices olive bread
1 cup sun dried tomato pesto
1 large tomato, cored and thinly sliced
8 ounces mozzarella cheese, thinly sliced
1/2 cup basil leaves

Place grill pan on stove over heat. Coat one side of each bread slice with butter flavored cooking spray or brush with melted butter. Place 4 slices sprayed side down on work surface. Spread 1 tablespoon pesto on each slice, top with 1/4 tomato slices, mozzarella and basil.

Top with remaining bread slices, sprayed side up. Place sandwiches on grill pan, top with foil. Place a heavy skillet on sandwiches to weigh down. Cook 6 minutes or until cheese melts and bread is toasted, turning once.

Makes 4 servings.
