Dinner in a Pumpkin

1 (12 inch) pumpkin
1 pound bulk pork sausage
1 cup rice, cooked
1 (4 ounce) can sliced mushrooms, drained
1 (10 3/4 ounce) can cream of mushroom soup

Cut a large lid from top of pumpkin; reserve. Scoop out seeds and string, and wash the pumpkin inside and out.

In a large skillet, brown sausage; drain well. Add rice, mushrooms and soup, stirring well. Pour into pumpkin shell and replace the lid. Put pumpkin in a large roasting pan, along with 1 1/2 to 2 cups water. Bake at 350 degrees F for 2 hours.

Remove lid and spoon out from top of pumpkin. If desired, cut squares of pumpkin from opening down, and serve with the sausage-rice mixture.

Serves 6.
